I'd say save your money and DON'T buy the 250GB system through fingerhut. For $299 you can get 120GB and with the $300 you save you can buy a 500GB HDD from newegg for $100 or you can go to Wal-Mart and buy a 250GB external and hook it up to your PS3 for about $60.
As for bundles I looked everywhere and the best place I found was Wal-Mart. They WERE offering PS3 bundles with games where you could select an accessory and a game for about $399 but everything is out of stock now. The only other suggestion I can give you is to check the classifieds section in the paper. I've seen a few people selling their PS3 and all of their games for about $100. If you do decide to go with the paper make sure the console works and games load before handing over the money.
Personally I'm not a big fan of the LEGO games but if I find one around where I live I'd be willing to throw down a few dollars and buy it for you guys. We'll see, I can be generous from time to time. Just let me know when you get the console, whats the point in sending you a game if you can't play it right?
