I've got a system that's about as good as yours, even if it isn't as ~super cool kidtastic~, and I can render videos at about half-speed, which is pretty goddamn good. Overclocking your system isn't going to suddenly make rendering a five minute long video take like 30 seconds, and I for one would rather wait the extra ten minutes or so than potentially [m'kay] up my computer just because I couldn't stand not looking at porn for a little while. If you're new at PC building, then the answer to "should I overclock" is always going to be no.

Jesus goddamn what the [m'kay] kind of video games are you playing that you aren't maxing out with one 670? Holy [poo], I can run The Witcher 2 on High at 60 FPS with one Radeon 6770, which is like half as strong as one of your cards. Don't even [m'kay] touch it for like 2 years and you'll still be maxing [poo] out at 60 FPS, and when things actually start slowing down then you can SLI, because then you might be like 15 and 80% less likely to blow up your entire house. Literally the best advice I can give you is to never touch your computer ever.
