Well, since Star Wars is George Lucas's story, I think if I had my own story, then I would want my audiences to view the latest draft of whatever the story is, especially if those older drafts don't match up with a prequel story I wrote to that story (yes, pretty dumb, I know). That could be Lucas's reason for removing previous versions of the movies from stock, although he could have just stayed consistent with the original Original Trilogy when he wrote the Prequel Trilogy to avoid all this revision mess (aside from restoring and remastering video quality). I agree that this is unfair to the fans that became fans because of the original theatrical releases. And you're right about Vader yelling "no" in both instances. I guess if it could be rationalized some more, then the "no" yelling is a character trait of the Anakin of the Prequels, so when he was Vader in the suit for the first time in RotS, he was still partially that Anakin. As time went on, he became the Darth Vader villain we all know. Then he went back to the light side in RotJ, became Anakin, and took on the Prequel's version "no" yelling trait again. It could be Lucas's attempt to show that Darth Vader of the Original Trilogy was the Anakin he established in the Prequels (in addition to the Hayden Christensen force ghost), which, as you have pointed out, most people aren't fond of.
